Grill night: bratwurst, mustard, and a forgiving crowd

1The poach before the char

Simmer the brats in a pan of beer with half an onion before they ever see the grate. Twenty minutes, gentle bubbles, not a boil or the casings split. Then they go on the grill just long enough to brown. This is the difference between a brat and a small disappointment.

2Set up a toppings bar, not a buffet

Sauerkraut, grilled onions, mustard in three strengths, and a bowl of pickled peppers. Keep it on one table near the grill so people drift over while you cook. Real brat people have opinions about mustard, and they will happily share them with a stranger holding tongs.

3Pretzels earn their place

Soft pretzels from the bakery, warmed in the oven, with the same mustard line. Nobody needs them and everybody takes two. If you feel ambitious, brush them with butter and salt before guests arrive so the smell does the inviting for you.

4The beer situation

A German lager or an amber ale, cold, in a cooler with ice, no ceremony. Buy one bottle per person plus a few for the poaching pan. The leftover simmering beer goes out with the coals bucket, not down the drain, or the kitchen smells like a tavern for days.

5Light the patio before dark

String lights overhead and a lantern or two on the tables. Early October nights arrive early and chilly, so a fire bowl earns its spot. People linger longer when they can see the brats and feel the heat, and the smoke drifting through the light looks like a postcard.
