Apple picking is not an hour, it's a shape. You drive out, you wander the rows, you eat one standing up like a thief, then you pay for a bag twice the size you planned. Plan the kitchen part before you leave home, or you'll be staring at forty pounds of fruit on Sunday wondering what happened.

A peck sounds modest. A peck is a lot of apples. Two people eating them fresh will go through a few a day, which means the rest need a job. Half to applesauce or butter, a handful to pies, the rest to a bowl on the counter where they'll slowly soften into baking apples. That's not a failure, that's the plan.

Melt soft caramels with a little cream, or go homemade with butter and brown sugar if you're feeling showy. Push a stick into a cold, dry apple or the caramel slides right off, and you'll blame yourself. Roll in chopped nuts, crushed cookies, or nothing. They look impressive and take twenty minutes, which is the best trade in the kitchen.

5Mini pies are the honest leftover move

The bruised apples, the small ones, the ones nobody reached for at the bottom of the bag, that's pie fruit. Small pies freeze well and bake from frozen, which means a February weeknight can taste like an orchard morning. Any crust works. Store-bought is fine and nobody has ever checked credentials at the table.
