
Chocolate fudge folds across the marble

Chocolate fudge curls into a thick fold as the confectioner moves a broad metal blade beneath its edge. His two hands grip the long wooden handle at different points, keeping the confectionery paddle connected to the glossy sheet. A plain cream cap, striped shirt and cocoa apron frame his concentrated expression without distracting from the work.
The marble work slab shows fine gray veins beneath the dark mixture. Behind it, copper pans hang against green and ivory hexagonal tiles, with jars and bowls on the surrounding counters. Warm lamps and cooler window light bring out the different surfaces. The low angle follows the handle toward the maker, then returns to the lifted edge of fudge across the foreground.
